Puerto Rican Fish Stew

Ingredients

1 lb tilapia fillet, cut into 1 1/2-inch pieces

2 tablespoons extra virgin olive oil

1 medium onion, chopped

4 garlic cloves, minced

1 (14 ounce) cans diced tomatoes

1 chili pepper, chopped

1/4 cup fresh cilantro, chopped

2 tablespoons sliced pimento stuffed olives

1 tablespoon capers, rinsed

1 teaspoon dried oregano

1/2 teaspoon salt

1/2 cup water, as needed

1 Avocado, chopped (optional)

Directions

Cook the onion in oil in sauté pan over moderate temperature setting, mixing from time to time till become tender, it takes approximately 120 seconds. Take garlic and add it and cook, mixing for SIXTY seconds.

Take the salt, oregano, capers, olives, cilantro, chile pepper, tomatoes and their juices, fish and add them and blend well. Don’t forget, you can add up to half cup of water if mixture gets dry. Then allow to simmer, covered, for 1/3 hour.

Then take away from heat. Use the avocado as garnish.
